Oatmeal Chocolate Chip Cookies

Servings 16 cookies

Ingredients  

  • 8 oz Butter, Unsalted
  • 180 g Sugar, Granulated
  • 200 g Brown Sugar
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 300 g AP Flour
  • 150 g Old Fashioned Oats
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 80 g Coconut Flakes
  • 226 Chocolate Chips or Chunks

Instructions 

  • Cream butter and sugar in the bowl of a mixer until light and fluffy, about 3 min.
  • Scrape down sides and add eggs on at a time, allowing to almost fully combine before adding the next egg, and vanilla , combine completely.
  • In a separate bowl whisk together flour, salt, oats, baking soda, cinnamon and coconut
  • Add dry ingredients to the eggs and mix until combined.
  • Fold in chocolate
  • Scoop cookies onto a lined tray and chill for 1 hr or more.
  • Preheat oven to 350ºF
  • Bake cookies for 12-14 min
  • Chill before enjoying.

Notes:

If you are making these cookies ahead, make the dough, scoop and refrigerate for 1 week or freeze for up to 3 months before baking.
