GF Oatmeal Creme Sandwiches

Servings 24 cookies

Ingredients  

  • 8 oz Butter, Unsalted
  • 300 g Sugar, Granulated
  • 120 g Brown Sugar
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 340 g Gluten Free Flour (I use Bob’s Red mill 1:1)
  • 110 g GF Old Fashioned Oats
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon

Creme Filling Ingredients  

  • 8 oz Butter, Unsalted
  • 113 g Marshmallow fluff (GF)
  • 350 g Powdered sugar, Sifted
  • Milk, as needed

Instructions 

  • Cream butter and sugar in the bowl of a mixer until light and fluffy, about 3 min.
  • Scrape down sides and add eggs on at a time, allowing to almost fully combine before adding the next egg, and vanilla , combine completely.
  • In a separate bowl whisk together flour, salt, oats, baking soda, cinnamon.
  • Add dry ingredients to the eggs and mix until combined. Turn your mixer on high and mix for about 1 minute.
  • Scoop cookies onto a lined tray and chill for 1 hr or more.
  • Preheat oven to 350ºF
  • Bake cookies for 12-14 min
  • Chill before filling.

Filling Instructions 

  • Cream butter for 1 minute until light
  • Add sifted powdered sugar and mix until combined.
  • Add marshmallow fluff and vanilla and mix until well combined and fluffy
  • As milk as needed to create a consistency for piping.

Notes:

If you are making these cookies ahead, make the dough, scoop and refrigerate for 1 week or freeze for up to 3 months before baking. Store assembled sandwiches in an air tight container in the fridge for up to 3 days.
