Cookie Butter Crunch

Servings 18 cookies

Ingredients :

Crunch

  • 220 g Cornflakes cereal
  • 160 g White chocolate, melted

Cookies

  • 1 lb Brown butter Made a day ahead, left on the counter
  • 260 g Cookie butter
  • 1 tsp Salt
  • 240 g Powdered sugar
  • 1 Tbsp Vanilla extract
  • 120 g Almond flour
  • 410 g AP flour
  • AN Sea salt optional

Instructions:

Brown Butter

  • The day before you plan to make these prepare the brown butter. Chop butter and put in a pot over medium-low hear until milk solids golden and your butter has a slightly nutty smell
  • Let cool slightly before pouring into a bowl and cooling completely
  • Wrap butter and leave on the counter overnight. It should be soft to touch! Microwave in 5 sec intervals if your butter hardens on the counter.

Crunch

  • In a large bowl, add cereal and drizzle white chocolate on top, use a spatula and a gloved hand to make sure all the cereal is coated
  • Pour coated cereal onto a sheet tray and flatten to a single layer, breaking up any big clumps, set aside to crisp up.

Cookies

  • Preheat oven to 350ºF
  • Cream brown butter, cookie butter, powdered sugar and vanilla until light and fluffy- about 3 min
  • Add flours and salt and mix until just combined
  • Fold in cereal until well combined. Scoop Dough out and flatten with bottom of a glass or fork down
  • Sprinkle with a bit of sea salt and bake for 12-15min until golden.
  • Once cooled down slightly, drizzle with some cookie butter (optional)

Notes

Cookies can be stored air tight in the freezer for up to 2 months.
