Fauxreos

Fauxreos are a delightful homemade take on the classic Oreo cookies, with a unique touch that makes them all your own. This version is softer than the traditional oreo cookie but you can flatten the dough out more and bake a little longer if you prefer a crispy cookie!

Fauxreo Cookies

Servings 16 cookies

Ingredients  

  • 8 oz Butter, Unsalted
  • 200 g Sugar, Granulated
  • 1.5 Tbsp Corn Syrup
  • 40 g Baking Chocolate, Melted
  • 2 large Eggs
  • 1/5 tsp Vanilla Extract
  • 226 g AP Flour
  • 60 g Cocoa Powder
  • 1/2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt

Instructions 

  • Cream butter and sugar in the bowl of a mixer until light and fluffy, about 3 min.
  • Scrape down sides and add eggs on at a time, allowing to almost fully combine before adding the next egg, and vanilla , combine completely.
  • In a separate bowl whisk together flour, salt, cocoa powder, baking powder and baking soda.
  • Add dry ingredients to the eggs and mix until combined.
  • Use a small scoop and scoop cookies onto a lined sheet tray, making sure to leave extra space.
  • Put a parchment over the cookies and flatten slightly.
  • Chill flattened dough for 4 hours or overnight.
  • Preheat oven to 350ºF
  • Baking time will depend on thickness. Check the cookies at 6 min and add 2 min at a time until cookies look matte and baked.
  • Chill completely before filling with your favorite buttercream, see notes for more filling ideas.

Notes:

If you are making these cookies ahead, make the dough, scoop, flatten and refrigerate or freeze. Dough is best used within 3 months in the freezer and 1 week if refrigerated.

Some filling options: Buttercream, Flavored Buttercreams, Ganache, Buttercream + Jam or preserves, Peanutbutter.
